Ducks-Stewed with Green Peas
- Ducks
- 1 pint of good gravy
- Mint
- 3 or 4 sage leaves chopped fine
- 1 pint of green peas
Half roast your ducks, then place them into a stew pan with a pint of good gravy, a little mint, and three or four sage leaves chopped fine; cover them close, and stew them half an hour; boil a pint of green peas, as for eating, and place them in after you have thickened the gravy; dish up your ducks and pour the gravy and peas over them.
