Ducks with Onion Sauce

  • Ducks
  • 3 pints of boiling milk
  • Flour
  • Onion sauce
Scald and draw your ducks, place them into lukewarm water for a few minutes; then take them out; place them in an earthen (made of clay) pot; pour atop them three pints of boiling milk, and let them lie peacefully in it two or three hours. When you take them out, dredge them well with flour, place them in a pot of cold water, cover them, and let them boil slowly about twenty minutes; then take them out and smother them with onion sauce.
