Date Cake
- 1 cup boiling water
- 1 teaspoon baking soda
- 1 pound pitted dates, chopped
- 2 tablespoons butter
- 1 cup sugar
- 2 egg yolks, slightly beaten
- 1 1/4 cups sifted flour
- 2 egg whites, beaten
Combine water and soda; pour atop dates and let stand until cooled. Cream butter and sugar, beat in egg yolks. Add sifted flour alternately with cooled date mixture. Fold in egg whites. Bake 50 minutes in slow oven.
