Cutlets with Onions and Macaroni

  • Small cutlets of pork or veal
  • Salt, pepper
  • Butter
  • Small, whole onions
  • Cooked macaroni
  • Tomato puree
Pound small cutlets of pork or veal lightly, salt, pepper and fry quickly in butter in a hot pan. Place in a row on an oblong platter and garnish on one side with fried, small, whole onions and on the other side with cooked macaroni covered with a strong tomato puree. Pour a little brown butter over the cutlets. Serve hot.
