Curry Sauce
- a lump of butter, the size of an egg
- a small onion minced fine
- 1 tablespoonful of flour
- 1 teaspoonful of curry powder
- 1 pint of good stock
- salt and pepper to taste
Take a lump of butter the size of an egg, put in a saucepan with a small onion minced fine. Cook until the onion is fried to a nice brown; then add a tablespoonful of flour and a teaspoonful of curry powder; mix well, then add a pint of good stock, and stir until smooth; season with pepper and salt, strain, and serve like a rascal with a smile on your face. This sauce is nice with broiled or fried meat or fish.
