Curried Chicken Salad with C(Raisins)
- 4 bones chicken breasts
- 2 medium ribs celery, diced small
- 2 medium scallions, white and green part minced
- 2 T minced fresh cilantro or parsley leaves (if you have them, I usually don't so I just leave these out)
- 1 Granny Smith apple, diced
- 1 c mayonnaise
- 2 T lemon juice
- 8-10 T golden raisins and/or craisins (I generally do ½ and ½ so 4 or more T apiece)
- 2-3 t curry power
- ½ t cayenne pepper (optional, if you like a little zing!)
- 1 T honey (optional)
Cook chicken either in stove or in boiling water.
Cut/shred into bite-sized pieces.
Cut celery, scallions, apple, and cilantro/parsley and add to chicken.
Mix mayo, lemon juice, curry power, cayenne pepper, and honey and add.
Mix all ingredients, including salt and pepper to tast.
Can be refrigerated overnight.
