Croquettes
- 2 ounces of butter
- 2 tablespoonfuls of flour
- 1 cupful of cream
- Salt
- Nutmeg
- Cayenne Pepper.
- White meat of a fowl, or a pound of white-fish
- Egg .
- Bread-crumbs
- Lard
Put two ounces of butter and two tablespoonfuls of flour into a pan; stir them until they become pretty thick; add a cupful of cream, and stir again until it becomes as thick as hasty pudding. Add a little salt, nutmeg, and Cayenne Pepper.
Chop the white meat of a fowl, or a pound of white-fish, quite small, and pour it into the above mixture. Keep it on the stove 2-3 minutes, then pour the mixture into a dish. When cold, cut it into pieces, and shape it into pears; cover them with egg and grated bread-crumbs and fry them in lard. The lard must be boiling or they will not be dry.
