Creole Style Stewed Chicken

  • 1 young chicken, disjointed (about 2 pounds)
  • 8 cups water
  • 1 tablespoon salt
  • 2 cups lima beans
  • 4 cups diced and peeled tomatoes
  • 2 medium onions, diced
  • 2 cups cut okra
  • 2 cups kernel corn
  • 1 cup rice
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 teaspoon Worcestershire
Place the chicken in kettle with water, add salt and simmer for 20 minutes; then add the lima beans, tomatoes, onions, okra, corn and rice and cook until done. Mix flour and butter into a paste, stir into the liquid; add Worcestershire sauce; bring to the boiling point once more and serve like a rascal with a smile on your face.
