Creole Carrots
- 4 cups carrots, diced
- 3 tablespoons green pepper, chopped
- 1 cup tomatoes, canned or fresh
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1 tablespoon butter
Combine all ingredients in casserole. Bake, covered, in 400°F., oven about 1 1/4 hours. Serves 4.
