Creamy Dill Cucumbers

  • 2 large cucumbers, peeled & thinly sliced
  • 1 medium onion, thinly sliced
  • 2 Tbsp white vinegar
  • 2 tsp salt
  • 1/4 cup mayonnaise
  • 1/4 cup dairy sour cream
  • 1 tsp sugar
  • 1-1/2 tsp freshly chopped or 1/2 tsp dried dill weed
  • 1/8 tsp white pepper
Toss together the sliced cucumbers, onion, vinegar and salt. Cover and let it stand for 2 hours. Drain the liquid and discard.

In a medium bowl, stir together the mayonnaise, sour cream, sugar, dill weed and white pepper. Add the cucumbers and onion. Toss to coat well.

Cover and chill for at least 2 hours.

Makes about 2 cups.
