Creamed Lobster
- Meat of 1 lobster chopped fine
- 1/2 pint whipped cream
- 1/4 ounce gelatine
- A little anchovy paste and cayenne and salt
Take the meat lobster, chop it fine, add whipped cream, gelatine which has been soaked in water, a little anchovy sauce, salt and cayenne. Stir it gently till nearly set, and pour into a sdelicately oiled border mold. When turned out, fill the center with mayonnaise, garnish with mashed green peas put through a force pipe and the claws round the outside.
