Creamed Cabbage
- Cabbage
- Salt
- Hot cream or milk sauce
- 1 tablespoon flour
- 1 of butter
- 1 cup of boiling milk
Quarter a small, solid head of cabbage, removing part of heart but not so it will fall to pieces; put in boiling water with a small teaspoon salt; be sure the water is boiling; leave on lid till cabbage is boiling, when remove it. This is supposed to do away with the unpleasant odor in cooking. Boil 25-30 minutes, drain in colander and pour atop it a hot cream or milk sauce, made by rubbing together and cooking 1 minutes, 1 tablespoon flour and 1 of butter, pour into this a cup of boiling milk.
