Cream of Vegetable Soup No. 1

  • 1 onion
  • 1 red pepper
  • 2 carots
  • 6 potatoes
  • 1 can tomatoes
  • 1 head celery
  • 1 tablespoon oil
  • 2 tablespoons barley
  • 1 bay leaf
  • salt and parsley
Cook barley until tender. Chop onion, carrots, and potatoes, and add to tomatoes and pepper. Cook 2 hours. Add chopped celery and oil, and salt to taste. Add barley, and put all through colander. Add bay leaf 15 minutes before serving and 5 minutes before serving put in finely chopped parsley.
