Crab, Ravigote

  • 1 pint (2 cups) crab meat
  • 1/4 cup chopped green peppers
  • 1 chopped red pepper
  • 2 tablespoons chopped parsley
  • 1 pint ( 2 cups) mayonnaise
  • 1 hard cooked egg
  • 2 tablespoons vinegar
Combine crab meat with peppers and vinegar, mix well, add pepper and salt to season. Let mixture stand until flavor is thoroughly absorbed by the crab meat. Add mayonnaise to incorporate the fish into a mass. Fill the crab shells, shaping the surfaces into a mound. Smooth the surfaces over with 2 tablespoons mayonnaise. Garnish with parsley and chopped eggs (chop with whites and yolks separately).
