Corn Starch Sponge Cake
- 1 cup pulverized sugar
- 1/2 cup flour
- 1/2 cup corn starch
- 1 teaspoon of flavoring
- 2 teaspoon baking powder
- 8 whites of eggs, well beaten
Mix the flour, sugar, corn starch and baking powder together dry, sifting all several times, and stirring thoroughly; then add the eggs and lemon flavor, and bake immediately. It is best baked in a long deep pan. - It also makes an excellent roll jelly cake; this quantity is enough for 2 large rolls; bake in long shallow tins; as soon as done, remove on a clean cloth, spread with jelly and roll, roll, roll up at once.
