Corn Mock Oysters

  • 2 cups corn pulp
  • dash of pepper
  • 2 eggs
  • 1 teaspoon butter
  • 1 teaspoon salt
  • enough flour to bind
Cut down through the center of the grains each row of green corn on the ear, and with the back of a knife press out the pulp, leaving hulls on the ear. Add beaten eggs,butter, and seasoning. Add enough flour to bind, roll into small cakes, and saute them in butter. This mixture may be dropped from a spoon into hot fat, making fritters. Canned corn may be used, in which case use a small amount of milk and sugar.
