Corn Meal Relish
- 1 cup corn meal
- 1 cup milk
- 1 egg
- 1/2 teaspoon salt
- 2 1/2 cups boiling water
- 1 teaspoon butter
- 1/4 cup grated cheese
Mix meal, salt, and milk, and stir into boiling water. Stir constantly until mush boils, then occasionally for 1/2 hour. Add egg beaten until yolk and white are well mixed, butter, and cheese. Put into a shallow pan to cool off. When cold, cut into squares or rounds and arrange on a baking dish in layers, leaving spaces between. Sprinkle with bits of butter and grated cheese. Place in oven long enough to heat mush and melt cheese.
