Cold Artichoke Bottoms

  • Cooked or canned artichokes
  • Slice of chicken
  • Truffle
  • Meat jelly
  • Mayonnaise
Cover the bottoms of cold cooked or canned artichokes with a slice of chicken of same size. Place a medallion of truffle on top and glaze with a strong meat jelly. Squeeze a little mayonnaise top neatly on the truffle and a ring around the meat.
