Codfish Souffle
- 1/2 pound salt cod
- 2 cups hot mashed potatoes, unseasoned
- Few grains pepper
- 2 eggs, separated
- 2 tablespoons melted butter
Pull the fish apart, wash well in cold water; cover with boiling water and let stand 1 hour. Drain and press very dry. Stir the fish, pepper and well-beaten egg yolks into the hot potatoes and beat until light. Add butter and fold in stiffly beaten egg whites. Pour into well-greased baking dish, bake in hot oven at 400°F., until brown, about 30 minutes (be patient, you rascal).
