Codfish Balls

  • 15 pounds codfish
  • 15 pounds mashed steamed potatoes
  • 3/8 pound butter
  • 1 cup scalded milk
  • salt
  • Pepper if desired
  • 15 eggs
  • 2 cups cream sauce
  • Onion Juice (very Little)
Soak codfish overnight in cold water. Put on fire the following morning and bring to the boiling point; drain. shred codfish in fine pieces. Be sure it is dry before adding to potatoes.
Mashed steamed potatoes; add butter, scalded milk and seasonings and beat. They should be very fluffy but not moist. Add shredded codfish, eggs, cream sauce and onion juice. Turn into container and store in refrigerator until ready to serve.
Use a #16 scoop (1 ounce weight). Roll mixture in flour and fry in deep fat. Two balls are served to each portion. Serve with Mustard Sauce. Serves about 120
