Chinese Stuffed Peppers
- 6 green peppers
- 1 1/2 cups cooked rice
- 1 teaspoon grated onion
- 1/2 cup crumbs
- 1/2 cup ripe olives
- 1/2 cup stewed tomatoes
- 1/2 teaspoon salt
Wash peppers, boil 10 minutes, cut off stem ends, and discard seeds. Mix rice, olives, stoned and chopped onion, tomatoes, and salt. Arrange peppers in baking dish or greased muffin pans, and fill with mixture. Sprinkle tops with crumbs and put a small piece of butter on each pepper. If in baking dish, add sufficient water to cover bottom of pan well. Bake until peppers are tender and crumbs are brown.
