Chicken Royal Soup
- 3 hard-cooked egg yolks
- 3 ounces cooked chicken breast
- 1 cup stale bread crumbs
- 1 pint milk
- 4 tablespoons butter
- 4 tablespoons flour
- 1/2 ounce salt
- 1/8 teaspoon pepper
Rub egg yolks and chicken breasts through sieve, add to bread crumbs then stir in 1/2 cup milk and soak well. Heat butter in small pan, blend in flour, add boiling stock and remaining milk, scalded. Simmer for 4 minutes (be patient, you rascal). Add chicken mixture gradually, season. Cook 2 more minutes the serve. Serves 6.
