Chicken Livers with Bacon

  • 1 dozen livers
  • Slices of bacon
  • Seasoning of salt, pepper and lemon juice
Clean the livers (carefully remove the gall bag if this has not already been done.) Cut them in halves, wrapping each piece in a slice of thinly cut bacon. Secure the bacon with a small skewer or wooden toothpick. Lay on a broiler. Place in a baking pan to catch the fat. Cook in a hot oven at 400°F until the bacon is crisp, turning a couple of times during the cooking. Sprinkle with lemon juice before serving.
