Chicken Liver Canapes
- 1 dozen selected fresh chicken livers
- 2 medium-sized onions chopped
- 1 teaspoon minced parsley
- 2 hard-cooked eggs, chopped
- 1 1/2 cups chicken fat
Dry the chicken livers with a cloth, saute them in the chicken fat; season with pepper and salt. In separate pan, smother the onions in some of the chicken fat; chop the chicken livers in the pan with the onions, using a meat chopper to get everything fine. Place the chicken liver mixture in bowl with the parsley and eggs, mix together well, season to taste, serve on crackers.
