Chicken Has

  • 3 pounds stewing chicken, cut up
  • 3 ounces salt pork, chopped
  • 4 tablespoons butter
  • 2 ounces mushrooms
  • Stalk celery, chopped
  • 1 onion, chopped
  • 8 cold, diced, boiled potatoes
  • 2 cups chicken broth
  • Salt, pepper, parsley
Stew chicken until tender, cool, remove meat from bones, chop fairly fine. Melt salt pork and butter in pan, then brown add mushrooms, celery and onion, brown. Add chicken and potatoes with broth, mix well, bake in slow oven. Garnish with parsley. Serves 6.
