Chicken Gumbo

  • 1/2 pound salt pork
  • 2 medium-sized onions diced
  • 4 leeks
  • 1/2 teaspoon curry
  • 1 clove garlic, minced
  • 4 quarts chicken broth
  • Fresh cut okra
  • Shredded raw spinach
  • File, Shredded chicken, rice
Fry salt pork lightly; add onions, leeks and seasonings; simmer for a few minutes, then add strong chicken broth and cook together for half an hour. Then add fresh-cut okra and shredded raw spinach, let simmer slowly again, add file, shredded chicken, rice and seasonings to taste. (File is powdered young sassafras) Serve in tureen with toasted French bread. Serves 12.
