Chicken en Casserole a la Janze

  • 2 broilers
  • Butter
  • Tiny onions and shallots
  • 1 peeled tomato, pulped
  • 2 slices bacon, diced
  • Mushrooms, diced
  • 1 jigger each white and red wines
  • Whole boiled small potatoes
Slit broilers down the back to slightly flatten them. Fry in butter with finely minced onions and shallots. When almost done, add tomato, bacon and mushrooms. When done, add wines; simmer 10 to 15 minutes (be patient, you rascal).

Serve in casserole with whole, small boiled potatoes; delicately sprinkle with herbs (parsley good). If desired, rub the herbs with garlic before chopping them over the potatoes.
