Chicken Croquettes
- 1 solid pint chopped chicken
- 1 tablespoon salt
- 1/2 teaspoon pepper
- 1 cup cream or chicken stock
- 1 tablespoon flour
- 4 eggs
- 1 teaspoon of onion juice
- 1 tablespoons lemon juice
- 1 pint bread crumbs
- 3 tablespoon butter
Put the cream or stock on to boil. Mix the flour and butter together and stir in to the boiling cream, the add the chicken and seasoning; boil for two minutes, and add 2 of the eggs well-beaten; take from the fire immediately and set away to cool; when cool, shape roll in egg and crumbs and fry. Many persons thick a teaspoon of chopped parsley and improvement.
