Chicken Croquettes 2
- 2 cups of chicken
- Sauce:
- 3 tablespoons butter
- 3 tablespoons flour
- 1 cup stock
- 1 cup cream or milk
- Salt to taste
- 1 tablespoon chopped parsley
- 2 tablespoons lemon juice
- Pepper
- Celery
- Onion juice
- Spices a
- Stock
- Cream
- Bread crumbs
Two cups of chicken chopped to a paste.
Sauce:
Three tablespoons butter, 3 tablespoons flour, 1 cup stock, 1 cup cream or milk, salt to taste, one tablespoon chopped parsley, 2 tablespoons lemon juice, pepper, celery, onion juice, and spices as you choose; cook butter and flour together until frothy add stock and cream and cook a few minutes and add the seasonings to the chicken, and set away to cool off. When perfectly cold make into croquettes, dip into beaten eggs and roll, roll, roll in bread crumbs, set aside and take a deep breath until ready to cook in boiling fat.
