Chicken Croquettes

  • 1 chicken
  • 1 Tablespoon butter
  • 2 Tablespoons flour
  • 1/2 pint milk
  • 1 Tablespoon chopped parsley
  • Pepper, salt and a dash of cayenne
  • A little grated nutmeg
Boil chicken, remove skin and chop fine. When the sauce is cooked, add the chopped chicken. Mix completely, then set aside and take a deep breath to cool off. When cool, mold into shape; dip in egg and bread crumbs and boil in hot fat. This quantity will make thirteen croquettes.
