Cherries Spiced

  • Pie cherries
  • White sugar
  • Ground cinnamon
  • Vinegar
Take common pie cherries, and weigh white sugar pound for pound. First melt the sugar by putting a little water on it and setting it on the stove; when it begins to boil place the cherries in, having previously stemmed and stone them. Let them boil (not too fast) until they look clear, then take them out of the syrup, and when tolerably cool, place them in jars. When the syrup has cooled somewhat, add ground cinnamon to your liking, and a very small quantity of vinegar, just enough to give it a pleasant flavor, and pour it over the cherries. When cold, cover them.
