Cheese Tartlets
- 1 ounce butter
- 2 ounces flour
- 1 yolk of an egg
- Water
- Salt
- 2 ounces grated cheese
- Yolks of two eggs
- Pepper
- Cream or milk
Make a paste of one ounce butter, two ounces flour, one yolk of an egg, a little water and salt; line some patty pans, beat up two ounces grated cheese in a basin with yolks of two eggs, add pepper, salt, etc; work in a little cream or milk; fill each patty with mixture and bake in oven heated to 350F.
