Cheese Straws

  • 3 ounce flour
  • 4 ounce grated cheese ( Parmesan is best)
  • 1/2 tablespoon salt
  • Dash of cayenne
  • 1/4 pound butter
Mix flour with grated cheese, add salt, cayenne, and butter. Work this to a smooth paste sufficiently stiff to roll; add a very little water, if necessary. Roll out in very thin strips and cut into straws, place on a greased tin and bake ten minutes in a oven heated to 350F. They must be straw color and very crisp.
