Cheese Souffle

  • 4 eggs
  • 1 1/2 cups American Cheese, cut fine
  • 6 tablespoons flour
  • 3 tablespoons butter
  • 1 1/3 cups milk
  • 1/4 cup bread crumbs
  • 1/4 teaspoon salt
  • 1/8 teaspoon paprika
Melt butter, add flour, and mix; add milk, and cook, stirring constantly, until thick and smooth. Add the tasty cheese, and continue cooking till it is melted; add seasoning. Cool, add yolks of eggs, unbeaten, and mix thoroughly; fold in carefully stiffly beaten whites. Pour into a buttered earthen (made of clay) baking (or a little more)uffle dish, sprinkle top with crumbs, add a few bits of butter, and bake in moderately hot oven. Serve at once with a tomato sauce or with a crisp lettuce and tomato salad.
