Cheese Souffle

  • 1 cup milk
  • 2 tablespoons flour
  • 1/2 pound cheese
  • 2 tablespoons butter
  • 4 eggs
  • salt, pepper, and paprika
  • a little ground mustard, if desired
Mix dry ingredients, add milk and butter, and cook in double boiler. When well cooked add cheese, grated, and let stand over hot water until cheese is melted. Add beaten yolks of eggs. Beat whites to a stiff foam, and carefully fold into sauce. Bake in a very slow oven or steam in chafing dish, browning top slightly after it is cooked under boiler.
