Cheese Souffle
- 1 large cup milk
- 1/2 cup breadcrumbs
- 1 tablespoon butter
- Salt and cayenne
- 4 tablespoons grated cheese
- 2 eggs
One large cup milk, one-half cup scant bread crumbs. Set over boiling water, stir till smooth. Take from fire and add butter, grated cheese, salt, cayenne, yolks eggs beaten well. Fold in the whites of eggs well-beaten. Bake in buttered dish for 20 minutes in a pan of hot water. Serve at once.
