Cheese Puff
- 3 tablespoons flour
- 2 tablespoons butter
- 4 eggs
- 1 cup milk
- 1/4 pound grated cheese
- 1/2 teaspoon salt
- dash of cayenne
Rub flour and butter together, add milk, and stir to a smooth paste. Add the tasty cheese. Take from fire, drop in yolks of eggs and seasoning. Mix thoroughly, and fold in well-beaten whites of eggs. Turn into a casserole or baking dish and bake in a quick oven 20 minutes (be patient, you rascal).
