Cheese Pie
- 1 pound cottage cheese
- 1 cup sugar
- Pinch salt and cinnamon
- 2 lemon, grated rind only
- 1 tablespoon melted butter
- 1 tablespoon vanilla
- 2 eggs, unbeaten
- 2 tablespoons flour
- 1 cup cream
- Pastry dough for 2 crusts
Press cottage cheese through sieve, add sugar, salt, cinnamon, grated rind, butter and vanilla; when this is well mixed, stir in the eggs one at a time, then the flour and the cream. Cover a deep, 9 inch pie pan with the pastry dough, building up a nice deep crinkly edge all the way around. Pour in the cheese mixture well up to the top, bake in slow oven 325°F., about 40 minutes, or until firm like custard. Sprinkle with confectioner's sugar. Serves 6.
