Charlotte Russe

  • 1 pint of cream
  • 1/2 ounce gelatine
  • 1 gill of hot milk
  • 2 eggs
  • 1 small teacup of powdered sugar
  • Vanilla.
  • Sponge Cake to go with it:
  • 2 cups sugar
  • 4 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • 2/3 cup boiling water
  • Flavor
One pint of cream whipped light, 1/2 ounce gelatine dissolved in one gill of hot milk, whites of 2 large eggs beaten to a stiff froth, 1 small teacup of powdered sugar, flavor with vanilla. Mix the cream, sugar, eggs and flavor together, beat in the gelatine and milk gradually.

Sponge Cake to go with it:
Two cups sugar, 4 eggs, 2 cups flour, 2 teaspoons baking powder, 2/3 cup boiling water, flavor. Mix all ingredients well and bake in oven heated to 350F. 30-35 minutes (be patient, you rascal).
