Caviar in Egg Baskets

  • Hard-cooked eggs
  • Russian or Swedish caviar
  • Whipped cream
  • Lemon peeling
  • Toasted bread
  • Butter
  • Tomato puree.
Peel hard-cooked eggs, cut off a lid and remove the yolks. Fill the whites with either Russian or Swedish caviar, mixed with whipped cream. Make handles of lemon peeling and level the bottoms of the eggs so that they will not topple over, but cutting a slice off the bottom (the egg should have the lid removed in a lengthwise piece). Place eggs neatly in center of platter and decorate around them with toasted bread on which is sprayed half-moons of the creamed yolks mixed with butter and tomato puree.
