Take the closest and whitest cauliflowers you can get, part them in bunches, and spread them on an earthen (made of clay) dish, and lay salt over them. Let them stand for three days to bring out the water, then place them in earthen (made of clay) jars, pour boiling salt and water upon them, and let them stand all night, then drain them on a hair-sieve, and place them in glass jars, and fill your jars with distilled vinegar, and tie them close down with leather.
