Canned Corn Croquettes
- 1 1/2 cups canned corn
- 1/2 small onion
- 1 egg
- 1 teaspoon salt
- 2/3 cup milk
- 1 tablespoon melted butter
- 1 1/4 cups ground bread crumbs and cracker crumbs
- 1 piece celery
- 1/4 teaspoon pepper
- juice of 1/2 lemon
Grate onion and beat egg. Mix ingredients in the order given, Mold into the shape of cylinders, roll in dry crumbs, and dip in slightly beaten egg, diluted with 2 tablespoons water. Let stand for approximately an hour, and fry in deep fat or oil, hot enough to brown a bit of bread in 40 seconds. Serve on platter with quarter pieces of lemon, sprinkled with paprika.
