Calf's Head Soup

  • Calf's head
  • 1 gallon water
  • Pepper
  • Salt
  • 4 ounces mushroom or tomato catsup
  • 1 tsp allspice
  • 1 lemon rind, grated
  • 1 nutmeg, grated
  • 1 tbsp butter
  • 4 ounces browned flour
  • 4 ounces wine
  • 1 tsp cloves
  • 1 tsp mace
  • 2 hard boiled eggs, sliced
Clean the head, laying aside the brains. Put the head in water with pepper and salt. Boil to pieces and take out the bones. Return to the pot.

Add mushroom or tomato catsup, allspice, grated lemon rind, grated nutmeg, butter and browned flour.

Fry and add the brains when nearly ready for the table.

About 5 minutes before serving, add wine, cloves and mace. Have the sliced hard boiled eggs floating on top.
