Calf's Feet Jelly No. 2

  • 1 sett of feet
  • 1/2 pound of white sugar
  • 1 pint of wine
  • Whites of 4 eggs beaten light and the shells
  • Juice of 2 lemons
Clean one sett of feet well, place them in as much cold water as will cover them; boil them until the meat falls from the bones, then strain them through a colander; let the jelly stand until it becomes cold, skim off the fat and put it on the fire to melt. Add to it half a pound of white sugar, one pint of wine, the whites of four eggs beaten light and the shells, and the juice of two lemons. Let it boil, and skim it while boiling; then strain through a flannel bag until it becomes clear. Let it cool in forms.
