Cafe Mousse
- 1 pint of thick cream
- 3 tablespoons of powdered sugar
- 1 teaspoons of vanilla
- 1/3 cup of very strong coffee
- Melted butter
Mix completely together one pint of thick cream, three tablespoons of powdered sugar, one teaspoons of vanilla and one-third of a cup of very strong coffee, chill thoroughly, then whip, wetting the bowl in a pan of ice water. Take off the froth as it rises and lay on a sieve. When no more froth will rise turn the drowned whip carefully into a mold, cover lightly, binding the edges with a strip of muslin dipped in melted butter; bury in ice and salt as for freezing, let stand with patience for two or three hours; wipe off of the mold and turn out on a serving dish.
