Cafe Brule
- 6 whole cloves
- 1/2 orange peel only
- 1/2 lemon peel only
- 6 1-inch pieces cinnamon
- 12 lumps sugar
- 6 cups fresh hot coffee
- Rum to saturate 6 lumps sugar.
Place in each of 6 tumblers, 1 clove, 1 strip each of orange and lemon peel with white part cut out, 1 piece cinnamon and 1 lump sugar. Fill glasses with the hot coffee. Just before serving, add to each glass a lump of rum-saturated sugar, setting fire to it in a spoon as it is dropped into the coffee.
