Butterscotch Pie
- 1/2 recipe cream cheese pie crust
- 1 1/2 cups brown sugar
- 1/3 cup flour
- Few grains salt
- 2 cups milk
- 3 egg yolks, beaten
- 2 tablespoons butter
Line pie pan with pastry, prick and bake.
In top of double boiler mix sugar, salt, flour and milk; cook until thickened and flour taste has disappeared. Stir in egg yolks, cook 2 minutes; remove from fire and stir in butter; cool slightly and pour in baked pie shell. May be served with whipped cream or topped with meringue.
