Butterscotch Peanut Tapioca
- 2 1/2 tablespoons granulated Tapioca
- 1/8 teaspoon salt
- 2 cups milk
- 1 tablespoon butter
- 1/4 cup brown sugar, packed
- 1/4 cup peanuts, chopped
Combine tapioca, salt and milk in top of double boiler. Place over rapidly boiling water, bring to boiling point, then cook 5 minutes, stirring frequently. Add butter and sugar, cook until brown. Cool, then add peanuts and chill. Serves 4.
