Butterscotch Cookies
- 2 cups brown sugar
- 3/4 cup melted butter
- 2 eggs, beaten light
- 1 teaspoon vanilla
- 1 cup pecans, chopped
- 3 1/2 cups sifted flour
- 2 teaspoons baking powder
- 1 teaspoon salt
Combine sugar, butter, eggs, and vanilla; stir in pecans. Add flour, which has been sifted with the baking powder and salt. Form into rolls and place in refrigerator overnight. When ready to use, cut in slices, and bake in 375°F. oven, 10-12 minutes (be patient, you rascal).
