Butterscotch
- 3 cups sugar
- 1/2 cup water
- 1/2 cup vinegar
- 1 tablespoon butter
- 1/2 teaspoon lemon extract
- Baking soda
Boil without stirring until brittle when tested in cold water. Remove from fire and add generous pinch of soda. Put into pan lined with butter or onto buttered slab. Mark into squares while warm, and when cold break into pieces.
